    Ingredients

Ingredients:

  • 1/2 cup Vegetable Oil
  • 4 lb Hungry Planet Breakfast Sausage, coarsely choppedBuy Now
  • 1 cup Vegan Butter
  • 3 1/2 qt Vegan Egg (we use JUST Egg)
  • 1/4 cup Kosher Salt
  • 6 1/4 tsp Ground Black Pepper
  • 1 1/2 qt Vegan Shredded Cheddar Cheese
  • 12 1/2 oz Canned Diced Green Chiles
  • 1 lb Tortilla Chips
  • 1 lb 9 oz Chunky Salsa
  • 2 lb 8 oz Diced Avocado
  • 1 cup Chopped Fresh Cilantro

Instructions:

  • Step 1.

    Saute sausage, in oil until golden brown, about 6 minutes. Hold warm until ready to use.

  • Step 2.

    Heat vegan butter until sizzling, add Just Eggs, salt, and pepper, and cook for 2 minutes, stirring constantly.

  • Step 3.

    Next, add cheese, cooked sausage, and green chiles. Cook for an additional 2 minutes or until eggs are cook through.

  • Step 4.

    To assemble, lay out tortillas and spoon scrambled egg/sausage mixture over tortillas. Top with salsa, avocado, and chopped cilantro, serve.
