    Ingredients

Ingredients:

  • 19 tbsp Canola Oil
  • 3 1/8 qt Cubed Sweet Potato
  • 1 1/2 qt Chopped Green Bell Peppers
  • 1 1/2 pt Raw Diced Onions
  • 3 lb 2 oz Hungry Planet Breakfast Sausage, choppedBuy Now
  • 6 1/4 tbsp Ground Cumin
  • 12 1/2 tsp Kosher Salt
  • 2 1/8 qt Vegan Egg (We use JUST Egg)
  • 1 1/8 qt Vegan Shredded Cheddar Cheese
  • 25 10" Flour Tortillas
  • 1 1/2 qt Ready-To-Serve Salsa

Instructions:

  • Step 1.

    In a large skillet, over medium-high heat, add 3 tablespoons of oil. Once hot, add in diced potatoes, and cook for 8 minutes.

  • Step 2.

    Next add your onions, and bell peppers and cook for an additional 3 minutes, or until sweet potatoes are golden brown and cooked through.

  • Step 3.

    Once vegetables are cooked, add in the cumin, breakfast sausage, and salt. Cook about 4 minutes or until thoroughly heated.

  • Step 4.

    Add, Just Egg and cheese to the sausage mixture and cook for another 4 minutes stirring constantly.

  • Step 5.

    To assemble, spoon equal amounts of breakfast scramble on top of flour tortillas, add 1⁄4 cup of salsa to each, and freshly chopped parsley to garnish.
