Foodservice Recipe

Ingredients:

  • 1 pound Hungry Planet Chicken™ Plant-Based GroundBuy Now
  • 1¼ tablespoons cajun seasoning
  • 4 tablespoons soy milk
  • ½ teaspoon vinegar
  • ⅛ teaspoon tabasco sauce
  • 1⅔ cups self-rising flour
  • 2½ teaspoons baking powder
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon red pepper
  • 2 teaspoons cajun seasoning
  • ¾ teaspoon paprika
  • ¼ teaspoon granulated garlic
  • ¼ teaspoon onion powder
  • 2½ teaspoons cornstarch
  • 2 tablespoons vegetable oil
  • 1⅓ tablespoons sugar
  • ½ teaspoon vanilla extract
  • 1⅓ cups almond milk
  • 1⅓ cups self-rising flour
  • 3½ tablespoons rice flour
  • ⅛ teaspoon baking soda
  • ¼ cup agave syrup
  • ¼ cup maple syrup
  • ½ teaspoon chili powder
  • ½ teaspoon malt vinegar
  • ⅛ teaspoon red pepper
  • ⅛ teaspoon kosher salt

Instructions:

  • Step 1.

    Thoroughly mix 1 pound Hungry Planet Chicken™ with 1¼ cups of cajun seasoning. Form into 4-ounce patties.

  • Step 2.

    Mix ingredients for soy buttermilk: 4 tablespoons soy milk, ½ teaspoon vinegar, and ⅛ teaspoon tabasco sauce.

  • Step 3.

    Combine ingredients for fried chicken coating flour: 1⅔ cups flour, 2½ teaspoons baking powder, ½ teaspoon kosher salt, ¼ teaspoon black pepper, ¼ teaspoon red pepper, 2½ teaspoons cajun seasoning, ¾ teaspoon paprika, ¾ teaspoon paprika, ¼ teaspoon granulated garlic, ¼ teaspoon onion powder, 2½ teaspoons cornstarch.

  • Step 4.

    Dip patties into soy buttermilk, and then into fried chicken coating flour. Repeat. Fry in 350°F oil until golden and reaches 165°F internal temperature.

  • Step 5.

    Whisk 2 tablespoons vegetable oil, 1⅓ cups sugar, ½ teaspoon vanilla extract, and 1⅓ cups almond milk together.

  • Step 6.

    Blend 1⅓ cups self-rising flour, 3½ tablespoons rice flour, and ⅛ teaspoon baking soda together. Add to the vegetable oil mixture. Blend ONLY until dry mixture is wet. Do not over mix - the batter should be lumpy!

  • Step 7.

    Preheat the waffle iron. When hot, put 1 cup of batter in the waffle iron and cook until golden brown.

  • Step 8.

    Combine the ingredients for the sweet heat maple glaze: ¼ cup agave syrup, ¼ cup maple syrup, ½ teaspoon chili powder, ½ teaspoon malt, ⅛ teaspoon red pepper, ⅛ teaspoon kosher salt. Bring all ingredients to a simmer, and remove from heat. Allow to cool for about 15 minutes before using.

  • Step 9.

    Serve fried chicken on waffles and drizzle with sweet heat maple glaze.
