Foodservice Recipe

Ingredients:

  • 12 ounce Hungry Planet Chicken™ Grilled StripsBuy Now
  • 2 cups sweet potatoes, cubed
  • 1½ cups bell peppers, diced
  • 1 cup onions
  • 1 cup button, baby bella, or shiitake mushrooms, quartered
  • 2 tablespoons oil
  • 2 teaspoons dried cumin
  • 1½ teaspoons smoked paprika
  • 2 tablespoons chopped parsley
  • 1 tablespoon finely chopped chipotles
  • 2 tablespoons dice jalapenos
  • 2 teaspoons garlic

Instructions:

  • Step 1.

    Heat pan on medium heat with 2 tablespoons of olive oil. Add potatoes, and cook for 6 minutes, stirring occasionally.

  • Step 2.

    Add peppers, onions, mushrooms, garlic, and spices and cook for another 2 minutes.

  • Step 3.

    Add Hungry Planet Chicken™ Grilled Strips, chipotle, salt, and pepper, and bake on 425℉ for 12 minutes.

  • Step 4.

    Remove from the oven, top with parsley and serve.
